Most of the steel I use is carbon steel. While many think they are old school and too simple to compete with the new high alloy super steels, I tend to disagree. Properly forged and heat treated carbon steels will perform with the best alloys, as a side benefit they require no special tools to sharpen. Nice when you are stuck 50 miles from nowhere and just dropped you high speed sharpener down the side of a mountian.(ask me how I know)
The main benifit I get from using carbon steel is I have the equipment and ability to heat treat each knife individualy. This way I know it is going to preform. I know there are many well known heat treating services out there and they do excellent work. But many of the knives I make go to work with people that bet their asses on them. I don't want one of my knives to fail because someone was having a bad day at the heat treating shop. If I do it myself I know it's done rite.
The steel most commonly used in my shop is 5160, followed closely by 0-1 and or 52100, L6 is used mostly in my military knives. My damascus will be exclusively made from L6 and 0-1 in the future.
I will work with S30V and 440C on folders. I only use these two because I have the ability to heat treat them in my forge.
